Healthy Grilled Peppered Prawn and Green Papaya Salad

Prawn Papaya SaladPapaya has many great health benefits along with being tasty! Papaya contains rejuvenating properties that especially assist in premature aging, it is good for male virility and green papaya is high in enzymes, which help reduce the chance of heart disease, stroke and cancer.
Here's a great summer recipe where green papaya is matched with prawns and has an added value as a great source of omega 3.
Ingredients
12 oz green papaya, finely julienned
8 spring onions, cut into rings
2 green chillies, sliced into fine rings
1 cup basil julienne
½ cup mint leaves
½ cup coriander leaves
Juice of 4 limes
Pinch Balinese sea salt (or Kosher salt)
1 tsp agave syrup
---------------------
12 king prawns (shrimp), peeled –tail on and de-veined
3.5 oz mustard greens or arugula
Olive Oil for brushing
Freshly cracked javanese long pepper (if not available black pepper can substitute)
Extra lime for garnish
Prepare (serves 4):
- Marinate the shredded green papaya in the lime juice and salt/agave for a few minutes (this becomes paw-paw)
- Place the remainder of salad ingredients into a mixing bowl
- Lightly brush the king prawns with olive oil and cracked pepper
- Place the prawns onto a hot grill and cook on both sides, about 2 minutes each side
- Place the prawns, green marinating paw-paw and dressing into the bowl and toss well
- Arrange neatly onto 4 plates
- Serve with a wedge of lime
